Just go with SYS and:
I7-SSD-1 Intel i7 4790K 4 c/ 8 t 4 GHz+ 32 GB 2 x 240 GB SSD Soft 16*
£35.00 ex. VAT
(or £42.00 incl. VAT)
A benefit is 4+Ghz and 16 additional ips for free (only one time setup fee payment) and great ddos protection but the network speed is 250Mbps, while in online.net you will benefit from DDR4 and a 1Gbps unmetered.
So your choice.

There are more differences between 250Mbps and 1Gbps? does it affect to loading or speed of a website?

No it doesn't, loading/reaching a website it depends from your PC speed. And 250Mbps is more than enought for a website, you need to optimise and use any CDN like cloudflare etc which it will help reaching faster.

Both providers have quite similar offers, is there any specific use for the required server?

Points to consider are that Online.net offers newer hardware and 300Mbit/s, while SoYouStart are older generation servers with 250Mbit/s. If you are satisfied with minimalistic support than SoYouStart is an option, if you don't feel comfortable with such ways of support Online.net offers "Business service level" which grants you priority technical support.

I don't require more support because I can setup somethings on my VPS or dedicated server. I need good uptime, ddos protection and a good network with high speed for my sites to run on it.

Well 250Mbps is not that bad at all, but yes if you need ddos protection and ips then SYS is your best bet.

The main difference is the storage, with SYS you can only have SOFT RAID, when you can have RAID 0/1/5 with online.
For web hosting, SOFT RAID is not a good idea, because with a RAID 0 you will loose all your data if a disk fail and with RAID 1 you will have lower performances because it require more resources to copy data over the 2 disks.
With a HARD RAID 5, you will have 500GB of storage and if a disk fail, you will not loose your data.

It's totally depends on your need, But here are few things which you need to think, On Soyoustart there are no additional setup charges for any dedicated servers and there are no monthly fees for extra Ip's you just only need to pay one time setup fee for a failover ip and the ddos protection is free with soyoustart server along with permanent mitigation option. But on Online.net's servers there are always a monthly charges for extra ip's along with the setup fees and they charge for the ddos protection as well and also they charge setup fees for each servers. So this is clear that soyoustart is more value for money as compare to online.net. As per my opinion you should go with soyoustart.

Another + with SYS is that if you don't want the server anymore just let it expire and the server will be deleted, while in online.net you are billed every 1-5th in a month if you forgot to cancell your server 15-20 days earlier you will be invoiced no matter if you didn't renewed or not.
