I want to create a .sh file to run a script or a batch of commands in it, how can I create, open, recompile or execute a .sh file? Which editor or tool can I use?

I would use a text editor like notepad ++ and just auto ftp sync it to the server if you need server side compile tools. To execute the file you just need make make it executable.
