Config VPS host on Linux for low memory?

I'm using a VPS host from a hosting company on the forum for some PHP sites. They offers a variety of Linux specs. I don't know how to config that will absolutely minimize memory usage while still keeping the site performance. So how should I configure it?

I've heard nginx has a smaller footprint (and is often faster) than Apache;
I should using any caching methods like APC, eAccelerator, Zend, XCache or something else?
Anything else I can do to keep memory usage low? please suggest me
