I don't know if there are any French people on the forum but for me (and I'm not advertising) one of the best hosts in France is O2switch. The customer service but also the technical service is very reactive and after several years I never had any problems. Moreover, this host is really cheap (60€ per year for an unlimited number of sites). After that, there is also PlanetHoster which is more known and works very well (but a little more expensive).

Here is my opinion on the subject, hoping to have helped you a little

Yes, O2switch offers a "backup-replication" service. For PlanetHoster, I'm not sure. I don't use it anymore, I centralized my sites on a single offer.

I will do it in simple way :) (well, not that simple anyway hahaha), after you see that their product lines is fit with your need, the next step is:
- Check with other providers
- Check about your best option in WHT
- Talk with their CS, see we have chemistry with them, ask technical stuff and see how they know their own products.
- Check on trustpilot to see the review.

Just info... I used reseller web hosting back from 15 years go :)
