Hey guys I am wondering about your opinion on one thing. I have spent countless hours of research over the years searching for various hosting services and every provider has a different pricing layout on their webpage.

Some have a simple layouts where you choose the main components and order the service, some have complicated processes of choosing every single component separately (CPU, RAM, Storage, Raid, Management, IPs,............), each component has 50 different options and it takes ages before you actually get to the check out page.

From an UX point of view, do you prefer to have the pricing as detailed as possible to be able to choose precisely, or do you prefer a simpler layout, complete the order as soon as possible and sort out the rest over email?

Often it just seems extremely overcomplicated, what do you think?

I perfer a clear format such as plan format which already defins what you will get with that plan; e.g. 3GB RAM, 2 cores Xeon E3, 25GB SSD, unlimited bandwidth etc.
if the user has to select the resources them selves it becomes confusing to many and they end up finding it much simpler to go for a already set out plan as a a non experienced user also tends to trust the hosting company's decision more on the configuration.
Experienced users mostly know that if they need a custom configuration on a plan, they can most likely contact the sales team.

Now the above is not for everyone and is just my opinion.

For me a simple table with 10-15 servers to choose is the best. The only component to edit could be the disks. Have the choice between SSD or Hard-drive could be good.
But I don't love to choose each component, if I need a dedicated server, the price will be the first "factor" of my choice,
so more it's clear, less I loose my time.

Why hosting sites didn't show all their hosting features on their offer page to let users know which they are offer, some features hid and users had to ask before purchasing a package.

A custom configuration can be helful for users today and I used this function more when buying hosting services.

Some providers do this to get the customer talking to them and some think there is too much information on the page which could either confuse the customer or ruin the look of the page.

While custom configuration can be easy for some like you to use, for more un-experienced users, its a trouble. deciding between the ratio of RAM & CPU could even confuse them more.
On the other hand I do see your reasons for wanting custom configuration.
