I am using PHP 5 for several sites and some sites with PHP 7 but I don't see any differences between them because I can use Memcache on server that running PHP 5 while with PHP 7 I had to remove that caching. In your point of view, which is better for websites? PHP 5.x vs 7.x?

Well, PHP 5.6 - the last of PHP 5 - is going end of life at the end of this year. So it's probably a good idea to think about moving to PHP 7.1 or PHP 7.2.

When PHP 5.6 goes end of life, it won't receive any security updates from PHP.

This may or may not be that important to you, but from the standpoint of insuring security, it's always best to base your software on tools that are still "in life."

If you have the possibility to choose the PHP version it is always recommended to go with the newest one. Lots of new applications and programmes are expecting the newest version. They have less security and other bugs and are usually much faster.

If your applications support PHP 7, go for it. Choosing old versions of PHP especially one which is reaching EOL soon is a real bad idea.
