Why we need to spend money to make our server secure? you are talking about buying some services to enhance server security levels?

I saw them on some forums, maybe they did marketing as well but I have not used their services hence I could not know it is really good or not.

I have never used a free theme for my business websites, if you are offering products/services to your customers, you need to use a professional theme, it will provide you better features that free themes did not.

This is really not important in web world today though. Everyone prefer using flat backgrounds and colors. Agree, I like grid layouts and it is trending in theme frameworks today because it will help users customize their layouts to whatever they wanted. I am sure this will not be encouraged...

Https is just a part to make your website more secure, it doesn't help in building a website. If you want to start a website, you should know about how to manage a web hosting and domain name, learn programming and some programming languages such as Mysql, Javascript, CSS, html...all of them...

Never tried Jetpack. Is it a theme framework to create themes for Wordpress?

If that was a small blog, I would go with a shared hosting, it will be easier to manage and cut cost.
