Ovh let me down, looking for alternatives

I have a long time costumer of OVH with 1gb dedicated server.
The server from time to time stop giving 1gb (sometimes I metered it but Okla at 10mbps, sometime 200mbps, sometimes 800-900mbps).
Looking for a solid supplier that if he promises 1gb unmettered this is what I get alwise (or 99.99 of the time).

Is this realistic? Or should I except this is the reality of all the providers and just buy X8 servers to cope with this BW issues? (This can lead me to close the bussiness :( )

Speedtest/Okla is not the best option/accurate to measure your speedtest. I would prefer using iperf or: https://network-speed.xyz/
Depends on region your server is, try your region in where your server is.
Also don't expect that any provider will allow you 24/7 to use the full port speed at the cheap price. Unmetered doesn't mean unlimited though.

How much should I expect? 90%? 80%? Do hertzner more reliable? Are there other more reliable provider?

Hetzner is perfect aswell, depend on your use case. What exactly are you running that it consumes 24/7 1Gbps port speed?

It's not really 1gbps 24/7, but it's not far from it, currently I barely get 1gbps any time (most of the time, I'm around 800mbps, part of the time 100mbps).

Can I expect 90% of the time 1gbps from Hetzner ?

Better go for small/medium providers that have market presence for at least 6 years and above. You should also check following things before you make final decision.

1) Company reps is/are active on one or another web hosting forum and reply with solution to the grievances of their clients.
2) 24 hour online chat supports by real persons and not bots throughout the chat. Try to chat with them and see the response. Even if they don't respond immediately but after some time that's OK.
3) Visit other support related pages like Knowledge base. See if they have support articles, videos. etc. on their KB website. It shows their seriousness about giving support to their clients.

In addition , assuming I take 10gbps machine is that will guarantee at least 1gbps 100% of the time?

1GB unmetered is a unreasonable. Most DC have caps on how much you can push out the network and how much much comes in to the network. Providers can supply with 1 GB connection but it is always checked on the usage.
