That simply means the server is running Nginx, and running through Cloudflare.

If you are looking directly at cloudflare.com then it is returning that they have a custom built engine cloudflare-nginx I'm sure it is something they've created themselves for their site(s)

My previous sentence isn't true because Cloudflare do not use nginx anymore, that's why you should only see server : cloudflare now.
But it's not possible to see the real web server used by a website because the server header is overwritten by Cloudflare.

We cannot say they are not using Nginx just bcause of the "Server" header. This is something we can easily customize and what people usually do...it can be set to anything....so don't assume the web server based the particual header.

I do not said "Cloudflare do not use nginx anymore" just because the header wasn't the same. Everything is expained in this article on Cloudflare blog
And in fact, nginx is still a part of their stack, even if it's not a simple web server with all customization performed by the Cloudflare team.

Just to comment on the quoted message - I really wan't pointing my figer on you rather I was trying to explain the actual question. So unless people leave it default, its not an easy guess to find the web server by refering the server header in the target website. As you said, big system like CloudFlare should be using some sort of complex server stack including router+firewall, cache, proxies, etc . So no point in checking their web server alone as its not serving the requests itself but have suporting servers/technologies also.
