I like using SEO to get organic traffic for my websites and I read that Google can check IP address on websites that linking together. So I should have different IP addresses for websites by buying different hosting plans on different servers so they will have different IP addresses?

Hello,
only if you are linking all your website together. Google bots will try to detect if a group of websites with backlinks use the same IP or not.
Otherwise, you can keep all your websites on the same IP.

If you're using IPv4 then it would be quite irresponsible for Google to penalise you for being on the same IP address due to their not being that many available in the world any more. Just use the same IP. They do detect and penalise link farms regardless of their IP address though so make sure you don't fall foul of that.

If you do not feel completely secure for your websites reputation and SEO, you can simply use Cloudflare or other CDN that will hide websited under their reverse proxy IPs. In this way there should be no linking seen in relation to IP for the search bots.
