Which one to choose between KVM and OpenVZ?

Both types of virtualization have distinct advantages and disadvantages. Choose which one is suitable for you.

OpenVZ is an operating system-level server technology that's actually based on the Linux kernel and OS. You can only run linux operations systems in an OpenVZ VPS and you cannot make any kernel level modifications inside the VPS. The VPS's on the host rely on the hosts kernel. One advantage of this is that it doesn't have the overhead a true hypervisor does.

KVM is true virtualization where the VPS operates as its own server, independently of the host node. Almost any operating system can run on three platforms: Linux, BSD or Windows. Since KVM is true virtualization, reliability and uptime on average should be greater under KVM.

KVM supports any operating system. So, KVM has no restrictions in terms of functionality but it has more overhead than OpenVZ.

Whereas OpenVZ is limited to Linux kernel only. However OpenVZ also gives better performance.

OpenVZ or any other container virtualization like LXC use less resources, but performance (CPU/Disk/Network) are better with KVM and virtio devices.
And globally OpenVZ allow massive overselling, and is less secure due to host kernel usage and isolation level. It's still not possible to run docker containers inside OpenVZ or LXC containers.

So in my opinion, OpenVZ is great to setup vps on your own dedicated server, but should not be sold as VPS.

OpenVZ is used only with Linux Platform, where as KVM works with different operating systems like, Linux Kernel, Windows, BSD and Solaris. OpenVZ has no dedicated kernel, unlike KVM. So going with KVM is better.

I think, KVM is better because -

1. In KVM, VPS acts as independent node that is it act like true virtualization. In OpenVZ, the host node is rely on host node's kernel.
2. KVM has more functionality without any restrictions. OpenVZ has some restrictions.
3. KVM's performance is better than OpenVZ.
4. KVM supports multiple operating systems while OpenVZ limited to Linux.

So it's always best to go with KVM. :)

KVM matters more if you are into setting up your own unique configuration. If you are looking to upgrade from shared hosting to VPS, OpenVZ will provide better performance.

If you want to offer just Linux VPS, then you may go for OpenVZ, but if you want to offer Linux as well as other OS then go for KVM, moreover OpenVZ does not allow custom kernels, but with KVM even with Linux clients can install their own custom kernel, so KVM gives more control and more option to customise to clients
