I use VPS and a managed dedicated server 16 GB of RAM. How did my web host configure it? can I buy unmanaged dedicated server and managing it for myself?
I would choose a Linux server from OVH or some dedicated providers on this forum. It will be very helpful for me If you guide me which tools/software/addons/ to install and configure a dedicated server for hosting websites?

Honestly this is some thing that you will have to either learn or get an expert to configure and manage the dedicated server since OVH do not support any OS level or other hosting level support to any of their servers.

still as a basic stuff .. first think on the blow things.

What operating system
what control panel
hosting packages
hosting addons

and last can I myself manage , optimize and tweak server if I get it from OVH.

If you get a control panel such as cPanel or Plesk, it makes things muuuuch simpler to manage. It is a very robust solution so you could get lost in the myriad of options, but once you explore and figure out the things you need, you will find that everything you need is in fact there.

If your server has cPanel or Plesk all essential system services will be installed, configured and ready to use.
If you want to set everything up yourself from a basic Linux install you will need a LAMP or LEMP stack and a mail server such a Dovecot. Once that's installed and configured your web/mail server is online. Don't forget a good firewall such as CSF.
